Wordless Wednesday - cook me some food
Okay, so it’s not really a wordless Wednesday, but there are pictures. And only a few words. So it’ll count, right?
This is a very, super duper easy recipe (I don’t even think it’s technically a recipe) that one can make for their family in a pinch. It’s cheap, it’s tasty and the best thing - little kids eat it up. And that’s fun. Oh, it also re-heats really well so it makes a spiffy lunch for the next day.

Get the goods. You’ll need some other stuff that I forgot to lay out. But this is a good start.

Get yourself some bacon out of the fridge (the precooked stuff works too)

I like to cover mine with paper towels so it won’t pop grease in the microwave and it soaks up more grease. Bacon = omygosh going to die from arteries clogging.

2 cups of water

In a pan to boil

2 Cups of rice. But I only had one. Oh no! What to do? What to do??

Ah yes, find the cell phone (and take a blurry picture)

Call your sweet neighbors and see if they have any rice.

Have them send over their adorable daughter with a box of rice.

put a tablespoon of butter in the water for your rice

And a sprinkle of salt

chop the bacon up

Put rice in boiling water

Cover & remove from eye.

Set it aside for five minutes. C’mon, you know how to make instant rice

Go back to the bacon and find the Big Sister chowing down on it (in her big girl panties!)

Sprinkle what is left of the bacon in a greased (or lightly sprayed with cooking spray) 2.5 quart dish

Put cooked rice over the bacon.

Take your one can of cream of chicken soup - it’s great for cooking, it says so right on the can!

Empty it into your now empty rice pan (let’s save on some cleaning, shall we?)

Fill the can almost full of water.

Add to the soup and stir.

Take your can of cooked chicken out. I always pick up a can of this stuff. It’s great for little casseroles (like this one) or for little enchiladas. It’s just quick and easy. And that’s what us mommas need. Sure a fresh baked chicken tastes a heck of a lot better - but in less than thirty minutes, this is easy peasy and I don’t have to de-bone chicken which grosses me out.

Open it up, old school. J bought this can opener for me for our first Christmas (I did get other things). I love it. It’s by far the most used gift ever. We had one of those really old school metal ones before and I couldn’t figure it out half the time. So this is wonderful. Yay for J.


break it apart and spread out on top of the rice in your dish.

Cover it with the soup mixture, then add lots and lots of pepper.

Bake it on 350

For 35 minutes.
Now let’s fix us some green beans. This is how my two year old eats them (wouldn’t you too?)

Get yourself a 4/$1.00 can of store brand green beans. Green Giant has nothing on these suckers.

A little bit of Extra Virgin Olive Oil

Two packs of Splenda (or just sugar works great too)

Put them all in a small pan

If you forgot to save back some bacon from earlier, pull out this little pouch of bacon bits. Yummy.

Dump them in there too. Yummy Yummy

Put them on low and let them simmer while the casserole cooks.
Now, if you’re a good mom, you’ll make some rolls or have another veggie or salad. But if you’re me, you’ll grab some salad mix out of the bag and throw it on the table at the last minute.
But go, do things while this cooks. Go outside with your kids, clean up more pee pee on the floor, nurse a baby who is now awake and screaming, hey - watch the news if you are so lucky. You’ve got a little bit to spruce up the house before your husband comes home. OR if he’s already there, excuse yourself to “go to the bathroom” but really go into the office and check your email.

Before you know it - it’s done!

Go to your cabinets and pick out the following:
1 can of cream of chicken soup (I realize there are two in the picture, but I was tired & confused from all the pee).
2 cups of cooked white rice (brown works too)
1 can of cooked chicken (you can use chopped chicken breast)
4 pieces of cooked bacon
1 can of green beans
some crumbled up bacon
2 packets of splenda (or sugar)
1 tablespoon evoo
Preheat oven to 350.
Cook bacon, cook rice. Put bacon in 2.5 quart baking dish, put rice on top, then chicken. Add soup to 3/4 can of water, pour on top of chicken. Add pepper. Bake for 35 minutes

Ooh that looks yummy! I’m always looking for new recipes with cream of chicken soup.
The only thing that would make that better is some shredded cheese right on the top. Bacon + cheese = love!

Oh, I am so very happy I followed your WW link. I was going to make Chili for dinner. I just got home from the park with two little boys and a sleeping infant and realized I have no chili seasoning! I do, however, have all the ingredients on hand to make this wonderful looking casserole and am so relieved to not be running to the store! I can’t get my kids to eat green beans so I’m going to try it your way and see if they like them. If not, I guess I’ll be forced to polish off the beans with BACON, and maybe a little butter thrown in for good measure. Poor me. Thanks for the menu rescue!

I must say that was the most…um…interesting recipe I have ever seen. I agree with Stacy@happy are we. I found myself being glad I wasn’t your dinner guest with your very adorable sprinkler system placed so sweetly near the bacon!
