Let’s Eat - Chicken Fettucine Alfredo
Here is my super duper easy take on a super yummy classic.
But beware, this is not for the lite at heart. (I’m so funny with my puns, it’s true.)

First, make sure that Little Sister has some zwieback toast to nibble on and crawl about while you’re trying to cook. This is much safer than letting her hang in the living room with Big Sister. Not more sanitary… just safer. Give and take, that’s what being a mom is all about. Man, her hair is wild.

Here is what you’ll need to gather out of your pantry & fridge.
Butter (a whole stick), heavy whipping cream, chicken, fettucine (linguine works too), onion and carrots.
I know you can’t tell on this picture, but Organic Chicken has gone up to nearly $8.00 a pound. Just craziness.

Get yourself a big pot of water on the stove. Put the eye on high. Yes, you’re going to boil some water.

Put a little oil in a pan (this is veggie oil).

Cut 1/4 of a medium sized onion

and dice it all about.

Throw them in the pan.

Open up a bag of pre-sliced carrots (or peal & chop about two large ones).

Throw those bad boys in with the onion. By the way, you want to turn your eye onto medium low at this point. And in about three minutes your chicken is going to smell like yum.

Take that stick of butter and cut it in half. Oh yeah, this is getting good.

Put half of it in the pan with the carrots & onions. You could use less, but why would you want to? Save the other half for later.

Rinse your chicken off. Now, this is new to me. I never used to rinse my chicken off. I don’t know if I’m supposed to or not, but I saw someone else doing it, so I figured I probably should start to. I dunno…

I have chicken tender breast strips, so I’m just cubing them up. I usually use chicken breast halves though and cube those up. It doesn’t matter what you use, just cut the pieces to bite size.

And get rid of the weird skin fluff that’s still on there. So gross.

And cube away.

Now you should have about a pound of bite sized raw chicken. Yum.

Stir the carrots and onions around a bit.

Add a little (lot) of salt to the pan. Seriously, it’ll need it. It helps the onions to break down and turn sweet, the carrots to just taste good and to season the chicken.

I usually move the carrots and onion to one side so I can get ready to add my chicken. It’s just a weird thing I do, you can just throw your chicken in with the carrots and onions.

Add the chicken.

then I make a single layer of chicken so that it will cook evenly. Again, this is just a Jill thing, so you can do it however you please.

By now your water should be boiling and you should go ahead and add your pasta (fettucine or linguine)

Stir it so it won’t get stuck together.

See how the chicken starts to cook all the way through. This is when I know I can stir it and mix the carrots, onions and chicken together. I don’t know why I do it this way. I just always have. I’ve been making this for ten years now, so it’s just a weird teenager thing I used to do.

Change your eye from medium

to medium low.

see how the onions are becoming translucent and everything looks so tasty? Yeah, its’ good stuff.

Pasta cooking? Check.

chicken cooking? check.

Now it’s time for half Naked Big Sister to run around the house. She had panties on, yay. And her beloved crocs. Oh, how I dislike those crocs (but man, are they a time saver for putting shoes on the kid’s feet!)

Daddy got home early. And since taking pictures of what one is cooking makes the cooking process take twice as long, he was home before dinner was ready. But it was nice to have him playing with the children while I cooked. Alone. Without two year old hands “helping” and Little Sisters who needed to hang out on my right hip.

Okay, the pasta is done. By the way, you should only cook it for about 9 minutes.

Now take that half stick of butter that you still have out on your counter top. Don’t skip on this, since we’re making our fake alfredo sauce.

Melt the butter. Tasty, no?

Take your heavy whipping cream. Oh boy.

And pour.

Until you use about 3/4 of the pint

Don’t you wish you could just drink that? No? Well… me neither. That’s totally gross.

And to be those noodles…

“Mix it all about” Big Sister has a song she sings and dances to. It goes, “Shake it all about, mix it all about, shake it all about…” And she wiggles/dances. It’s fun times.

Now for the parmesan cheese.

Take about a handful and throw it in with the pasta & cream sauce.

stir it in. It will melt and be oh so lovely and all types of wonderful.

Take a nice big helping of pasta, add the chicken, carrots and onions on top and enjoy. Oh yes, it is tasty tasty tasty.

Now, if EVERY cookbook had as many pictures, I just might be a better chef.
And by the way, I *must* buy pre-chopped chicken. Doing it myself makes me want to hurl every time.

This is one of my favorite things to eat! I just made it, the easy way (with jar sauce), last night. I like to add broccoli, but the carrots would be a good addition. I will be saving your recipe and trying it next time. Great pictures once again!
